It’s been awhile since I’ve done a recipe post and I’m ready to bring them back!
I recently made these DELISH tofu tacos and thought that this would be the perfect recipe to share with my blog readers. It’s seriously simple to make, really yummy, and totally vegan. It’s also a healthy version of tacos, which in a traditional sense are often filled with not-so-nice ingredients.
To make these tacos, you’ll need (make 3 tacos or 1 serving):
- 3 corn taco shells (the only ingredients should be corn, lime, and water)
- 1/4 block of extra firm tofu
- 1 red onion
- 1 cup of butter lettuce
- 3 baby bell peppers
- 1 jalepeño
- 1 handful of cilantro
- 1/4 of an avocado
- 2 tablespoons of sriracha, 1/2 tablespoon of lime juice, 1 teaspoon of soy sauce for the marinade
For the sauce:
- 3-4 tablespoons of Sriracha
- 1/2 teaspoon of Manuka honey
- 1 tablespoon of lime juice
- 1 teaspoon of rice vinegar
- 1 tablespoon of minced garlic
- 1 teaspoon of soy sauce
- A pinch of paprika
Step 1: Marinade the tofu with Sriracha, lime, and soy sauce for anywhere between 20 minutes and 4 hours, depending on how strong you want the flavor to be. Slice the block into fourths and slice each piece lengthwise.
Step 2: Grill the corn tortilla shells, either on a small grill like a George Foreman, on an actual grill, or on a gas stove.
Step 3: Meanwhile, prepare your vegetables: slice your onion, baby bell peppers, and jalapeño. Open your avocado and slice three to five strips to add to your taco. Chipenade your cilantro.
Step 4: Once browned, remove your taco shells from the grill. Replace with your tofu and let cook until there are visible grill marks .
Step 5: Assemble your tacos by adding in your tofu and vegetables to the shells
Step 6: Now, onto the sauce! For this, all you have to do is combine the ingredients of the sauce into a bowl (no need to blend) and stir with a spoon. Then, add on the side, on top of your tacos directly, or both!
